Health Benefits of Carrots

Hi,

I always wonder why does my husband pushes to me to eat carrots. We always keep 2 - 3 lbs of fresh carrots in our fridge. To solve my query I googled about carrots and found some very interesting facts about it. And now I got to know the reason for his incitement for carrots.

So let's have a look at its benefits.

Prevent Cancer

It greatly helps in fighting against breast cancer, lung cancer and colon cancer. It is rich in compound "Falcarinol", which is an anti-cancer agent. It is pesticide that acts as an anti-fungal agent.

Improve Vision

Our retina needs Vitamin A, the deficiency of which results in night blindness. Carrots contains beta-carotene that is converted into Vitamin A in liver. In retina this vitamin is converted into "Rhodopsin". It is a purple pigment that helps in improving vision at night. It also protect against macular degeneration.

Prevent Heart Disease

Carrots help in keeping the hearth upright. The regular intake of carrots reduces blood cholesterol. The fibers present in carrots combines with and removes bile acid from blood stream. Cholesterol triggers are dissolved further to create more bile acid in the blood stream. Hence it reduces blood cholesterol.

Reduce the Risk of Stroke

According to a research conducted by Harvard University, people who ate 6 carrots a week are less prone to stroke than those who ate only 1 carrot a month or more.

Nourish Skin

 It helps in nourishing skin alike potato. It is a cleansing and detoxifying agent and effective in treating acne caused due to blood toxins. Vitamin A formed with carrot intake helps in revitalizing the dry, dead skin and removing other skin blemishes.

Anti-Aging

It is also an anti-oxidant and therefore helps in improving the immunity of our bodies. It fight against free body radicals and slows down aging cells. 

Dental Health

Eating carrots after the meals is a very good practice as carrots are natural abrasives that helps in removing plague and dirt from teeth and gums. It also helps in producing saliva that helps in removing stains on teeth.

So eat at least one full cup of carrot a day to get benefited.

Let's eat Awesome Khichadi

Khichadi is an Indian cuisine, generally served to those who have bad stomach :P But people with good stomach also like it :) So what makes it different with other cuisines is its lightness. It is very light and that is why always suggested to patients with stomach issues. It is very easy to make and at the same time delicious. So let's have a look at the ingredients.

Ingredients

1/2 cup        Basmati Rice
1/2 cup        Moong Dal (Green Gram)
1/4 cup        Peas
1/4 cup        Chopped Beans
1/4 cup        Sweet Corn
1/4 cup        Chopped Carrots
1/4 cup        Chopped Onion
1/4 cup        Chopped Tomato
2 tsp            Oil / Butter / Ghee
1/2 tsp         Cumin Seeds (Jeera)
1 pc             Bay Leaf (Tez Patta)
2 pc             Dried Red Chilli
1 tsp            Ginger Garlic Paste
1/2 tsp         Garam Masala (Curry Powder)
1/2 tsp         Turmeric Powder (Haldi Powder)
Salt to taste

Procedure

  1. Wash rice and dal in a bowl 3 - 4 times till it gives clear water. Add fresh water and soak it for 15 minutes.
  2. Put the pressure cooker on flame, add oil. On heated oil add cumin seeds, bay leaf, red chilli, ginger garlic paste and stir well.
  3. Add onion and heat till it gets light pink in color. Add beans, corn, carrots and heat for 1-2 minutes. 
  4. Add turmeric powder and garam masala and heat for 2 minutes.
  5. Drain rice and gram mixture and add to pressure cooker. Heat for further 2-3 minutes.
  6. Add 2 cups of water and close the lid of pressure cooker. Keep it on medium flame and heat till it blows 1 whistle. 
Khichadi is ready to be served with Curd, Papad and Pickles.

Hara Bhara Kabab / Vegetable Kabab

Hello All,
 
Today we are going to learn how to make Vegetable Kabab or Hara Bhara Kabab. But before that let us have a brief look at the ingredients.

Ingredients

Procedure


  1. Boil the potatoes until tender.
  2. Peel the boiled potatoes and mash them with a masher.
  3. In a big mixing bowl add mashed potatoes, corn powder, all vegetables, and spices.
  4. Mix well the above mixture with the hand and check the hardness of the batter.
  5. The batter should be hard enough to make the fine balls of it. If required add some more corn powder and mix well to make it harder.
  6. In a frying pan add some oil and put it on flame.
  7. Fry these balls in hot oil pan and cook till they get little brown in color.
  8. Hara Bhara Kabab is ready. Serve hot with either chutney or sauce.

Corn Vegetable Soup

Hi,

Today I cooked corn vegetable soup for the breakfast. It was very simple and was prepared in just few minutes. All I needed was a couple of vegetables in my fridge and that's it! Really astonishing it seems as it is very simple to make and with that tasty too. So  let's have a look at its ingredients.

Ingredients
1/2 tbsp        Sweet Corn Pieces
1/2 tbsp        Beans Pieces
1/2 tbsp        Peas
1/2 tbsp        Carrots (Chopped)
1/2 tbsp        Cabbage (Chopped)
1/2 tbsp        Broccoli (Chopped)
2 tsp             Corn Powder
1 tsp             Cilantro Leaves Powder (Garnishing)
Soya Sauce to color
Vinegar to taste
Chilli Sauce to taste
Black Pepper Powder to taste
Salt to taste

Procedure
  1. Put a pot on flame and add 3 full cups of water in it.
  2. Add all the chopped vegetables in it.
  3. In a separate bowl add corn powder and wet it with few 2-3 tsp of water so that it does not form lumps in water bowl. Now add the corn powder mixture in the vegetable pot.
  4. To this add some salt and black pepper and boil until the soup thickens considerably.
  5. Add some water if you want clear soup.
  6. Put the flame off after boiling the soup once. You can adjust the flame according to your need.
  7. Serve hot in the soup bowl and to this add soya sauce, vinegar and chilli sauce according to your need.
Your delicious yet less time consuming soup is ready in just 15 minutes.

Baked Potatos

Hello all,

Potatos are one of the most common vegetable that we use in our routine cooking. It has many benefits, to name a few:

  • Helps in Gaining Fat
  • Helps in Digestion
  • Skin Care
  • Maintains High Blood Pressure

Apart from these above mentioned benefits it is a good ingredient to add taste to any cuisine. So today we are going to discuss how to make simple baked potatos.



Ingredients Quantity
Medium Size Potatos 3
Oil (Daily Purpose/Olive Oil) 3 tsp
Ground Black Pepper 1/2 tsp
Curry Powder/Garam Masala 1/2 tsp
Mint Powder/Leaves (Garnishing) 1/2 tsp
Coriander Leaves (Garnishing)
Lemonade according to taste
Salt according to taste
                              

Procedure
  1. Wash and peel potato and cut into equal 8 pieces making a shape of half moon.
  2. In a bowl add potatos, oil, ground black pepper, curry powder and salt. Mix well.
  3. In an oven tray spread silver foil and grease it with some oil.
  4. Preheat the oven to 4250F.
  5. Evenly spread potato piece mixture over the tray.
  6. Keep the tray in oven for 30-35 minutes.
  7. Bake until the potatos turn brown with crispy border.
  8. Garnish with coriander leaves, mint leaves/powder, lemonade and serve hot.
